How does waterless cooking work?
Steam inside the pot comes into contact with the lid and forms droplets,
which collect in the channel between the lid and the pot itself, creating a
sealing layer of water that allows the lid and pot to adhere and maintain contact, preventing moisture loss.
You're essentially using the water contained in the ingredients, rather than
adding it.
If using ingredients with low moisture content, you may need to
add a little water.
